Mexico now has its own answer to Champagne—and it’s called Cirilo.
It is not a traditional tequila. Not a sparkling wine. Not a ready-to-drink you find on any shelf. Cirilo represents an entirely new category: the first premium sparkling tequila, created to occupy the celebratory space long held by Champagne, Prosecco, and Cava, but with a distinctly Mexican soul.

What Exactly Is Cirilo?
Cirilo is a sparkling beverage made from 100% blue agave reposado tequila, with 11% alcohol, fine, persistent bubbles, and a fresh, expressive profile that smells and tastes, above all, of agave. It is served chilled, between 6–8°C, without ice—just as you would a high-quality sparkling wine.
The concept may sound simple, but bringing it to life required nearly a decade of technical development.

The Story Behind It: 80 Years of Tequila Expertise
Cirilo was not born in a trend lab or branding agency. It was created at Tequilas del Señor, a fourth-generation family distillery founded in 1943 in Jalisco, Mexico—one of the most influential, and quietly impactful, players in the history of tequila.
Their legacy is extensive, even if not widely known:
- hey created the original tequila coffee liqueur, now the most successful product of its kind worldwide.
- They introduced some of the first extra añejo tequilas aged up to 15 years, long before the category was officially recognized.
- At the helm is Don Manuel García, CEO of the distillery and one of the few remaining Master Tequileros, a figure who has shaped modern tequila largely behind the scenes, always prioritizing innovation over visibility.
Cirilo is a natural continuation of that legacy. The question behind it was ambitious: could blue agave tequila exist in a sparkling format without losing any of its identity? The answer took eight years to achieve.

The Innovation That Defines It
The technical process is worth understanding—because it is genuinely unique.
In most distillation methods, the natural effervescence generated during agave fermentation is simply lost. The team at Tequilas del Señor developed a proprietary, patent-pending process that does the opposite: it captures that natural effervescence and precisely reintegrates it into the reposado tequila.
The result is bubbles that do not come from any external or artificial carbonation process—they originate from the agave itself. This gives Cirilo an elegant texture, a structured mouthfeel, and a persistence in the glass that sets it apart from any other sparkling beverage on the market.
Eight years of work. A specialized technical team. Equipment developed from scratch. All to ensure balance, stability, and consistency in every bottle.

How to Drink It
Cirilo is best enjoyed on its own, well chilled, in a flute or white wine glass—exactly as it was designed to be experienced.
At the table, it pairs naturally with:
- Fish and seafood
- Poultry
- Charcuterie and cheeses
- Desserts
In mixology, it functions as a sparkling base with character: adding effervescence and structure without masking the flavor of agave, making it an intriguing ingredient for bartenders looking to experiment.

Why Cirilo Matters Beyond the Glass
There is something larger behind this bottle. Cirilo is a cultural statement.
While the world celebrates with French Champagne, Italian Prosecco, or Spanish Cava, Mexico—the country that gave the world tequila, one of the most expressive spirits—had not yet offered an equivalent at that level of sophistication. Until now.
Cirilo does not compete with those traditions. It respects them, learns from their texture and ritual, and proposes something unmistakably Mexican. Its bottle may feel familiar in silhouette, but its execution is bold. Its identity is contemporary, confident, and without compromise.
It is Mexican innovation rooted in more than 80 years of expertise—and in the world of premium beverages, that is exceptionally rare.

What to Know Before You Look for It
Cirilo is the flagship brand of Cirque Spirits, a joint venture between Tequilas del Señor and Spirits Alchemy, created to develop unconventional brands within the tequila universe. The goal is global expansion—without losing technical control or the cultural integrity behind the product.
In other words, this is just the beginning.
