This summer, one of the most elegant aperitivo destinations in Rome officially returns. Aquazzura Bar is back at Hotel de Russie for the 2026 season with new cocktails, tequila-focused experiences, and a refreshed culinary concept set within the hotel’s iconic secret garden.

Located on Via del Babuino, the space has become one of the most sought-after spots during the Roman summer thanks to its relaxed atmosphere, lush greenery, and aesthetic that effortlessly blends hospitality, design, and fashion.

For this new season, the bar introduces an updated cocktail menu created by Mattia Capezzuoli, the hotel’s Bar Manager. New signatures include Picante, with a bolder and more spice-driven profile; Smokey, built around deeper, more layered smoky notes; and Blanco, a fresher and cleaner cocktail designed for warm summer nights in Rome.

Throughout the season, the bar will also host special tequila activations and collaborations with internationally recognized guest bars.

A New Culinary Direction

The culinary offering has also evolved this year with new creations by chef Fulvio Pierangelini, who designed a menu intended to complement the aperitivo experience in a more relaxed and shareable way. Highlights include swordfish with green pepper, marinated chicken skewers served with lemon-infused sweet potato, and a selection of tapas and tacos created for the table.

Part of what makes Aquazzura Bar so distinctive is its setting. The secret garden at Hotel de Russie has long been considered one of Rome’s most iconic spaces, maintaining a quiet, hidden atmosphere despite being in the center of the city.

The hotel, part of Rocco Forte Hotels, is located between Piazza del Popolo and Spanish Steps and recently completed a renovation exceeding €30 million, led by Olga Polizzi, the group’s Deputy Chairman and Director of Design.

The project included redesigned guestrooms and suites, updated common areas, and a complete renovation of the spa. Among the standout spaces is the Nijinsky Suite, featuring a private terrace overlooking Villa Borghese, as well as the new Forte Vita Bar, dedicated to wellness treatments and express beauty experiences.

With this latest season, Aquazzura Bar once again positions itself as one of the defining destinations of summer in Rome—a space where cocktails, food, design, and the spirit of the city come together naturally.
