
After nearly a decade in Del Valle, Kaito, the female-led cocktail bar, has relocated to Juárez, expanding its concept while preserving the essence that made it a benchmark. Founder Claudia Cabrera—recipient of the Roku Industry Icon Award at North America’s 50 Best Bars 2024—leads this new chapter in a space that celebrates a deep love for cocktail culture.



The entrance itself is part of the experience: a discreet access through turnstiles in an office building leads to a dimly lit hallway and a neon-lit antechamber. There, an old-school vending machine marks the passage into the main salon, where the interior blends concrete, light wood, and hand-painted pieces that pay tribute to Japanese aesthetics.

The new location features a three-station bar, an innovation lab, and double the seating capacity. Shelves showcase an impressive collection of spirits and liqueurs, framed by a delicate mural of amas—Japanese free-diving women who inspired the Kaito concept—painted like a giant watercolor.



The menu is divided into Signature Cocktails, Frozen Cocktails, Classics with a Twist, RTDs, Mocktails, and beer. Highlights include:
- Happosai – A fresh, aromatic highball created by Claudia Cabrera, made with mezcal, sake, and bergamot liqueur.
- Kosen – A vibrant drink combining mezcal, sherry, pineapple, lemon, with a touch of wasabi and miso salt, served in a ceramic Pikachu-inspired glass.
- Tokyo Garibaldi – A Japanese spin on the classic Italian cocktail.
- Margarita Neko – A milk punch reinventing the classic margarita, made with agar-agar and buttermilk whey.
- Frozen renditions of drinks like the Snow Monkey Negroni and Snow Monkey Colada turn the act of drinking into a visual and sensory game.

The culinary offering keeps the spirit of an izakaya: comfort food designed for sharing. Beloved staples like fried gyozas, takoyaki, and katsu sando remain, joined by new creations such as curry fries, BBQ-glazed ribs with sweet potato purée, and seared salmon rolls topped with yuzukosho.
